Easy Creamy Lasagna Soup

A cozy and comforting lasagna soup that combines the rich flavors of traditional lasagna in a creamy, slurp-worthy bowl.

  • 1 tablespoon olive oil
  • 1 medium onion (finely diced)
  • 1 pound ground beef (80/20)
  • 5 cloves garlic (minced)
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth
  • 2 teaspoons kosher salt (divided or more to taste)
  • 12 lasagna noodles (uncooked and broken into 2” pieces)
  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese (freshly grated)
  • ½ cup ricotta cheese
  • 6 tablespoons fresh basil (finely chopped)

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Toss in the finely diced onion and sauté until translucent, about 4-5 minutes.
  2. Add the garlic and ground beef: Stir in the minced garlic and ground beef, cooking until browned (about 7-8 minutes).
  3. Spice it up: Sprinkle in the red pepper flakes and dried oregano. Stir for a minute.
  4. Incorporate tomato: Add the tomato paste and mix well, then pour in the tomato basil pasta sauce and canned diced tomatoes. Stir and let flavors mingle.
  5. Add broth and seasoning: Gradually pour in the chicken broth, scraping the bottom of the pot and seasoning with kosher salt. Bring to a simmer.
  6. Toss in the noodles: Once bubbling, add the broken lasagna noodles and simmer for about 10 minutes until al dente.
  7. Cream it up: Drizzle in the heavy cream, add half the shredded mozzarella and parmesan. Stir until melted.
  8. Finish it off: Remove from heat and fold in the ricotta cheese and fresh basil.

Notes

For added flavor, serve with extra mozzarella and fresh basil on top. This soup can be made ahead of time and stored in the fridge.
