One-Pot Garlic Parmesan Chicken and Rice

A comforting and easy one-pot meal featuring chicken, rice, garlic, and Parmesan cheese.

  • 2 cups chicken breast, diced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Sear the diced chicken breast, seasoning with salt and pepper, until browned and cooked through—about 5-7 minutes.
  3. Add the minced garlic and Italian seasoning; cook for about 1 minute until fragrant.
  4. Stir in the rice to coat it with the flavors.
  5. Pour in the chicken broth, scraping up any bits from the bottom of the pan, and bring to a simmer.
  6. Cover and let simmer for about 20 minutes until the rice is tender.
  7. Incorporate the grated Parmesan cheese, stirring until melted and creamy.
  8. Garnish with fresh parsley and serve.

Notes

For an extra creamy texture, consider adding a splash of milk or cream. Optional variations include adding vegetables or spices.
