Garlic Parmesan Crockpot Chicken and Potatoes

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients by gathering all and chopping your garlic.
  2. Sear the chicken breasts in a pan with olive oil (optional).
  3. Layer the halved baby potatoes first in the crockpot.
  4. Add the seared (or raw) chicken breasts on top of the potatoes.
  5. Mix the chicken broth, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes in a bowl.
  6. Pour the mixture over the chicken and potatoes.
  7. Sprinkle grated Parmesan cheese on top, then drizzle with olive oil.
  8. Crockpot on low for 6-8 hours or high for 3-4 hours.
  9. Finishing touches: add more Parmesan and parsley before serving.
