Loaded Baked Potato Soup

A comforting and creamy Loaded Baked Potato Soup, rich in flavor and perfect for chilly days.

Ingredients

  • 4 large Russet potatoes, peeled and diced
  • 6 strips thick-cut bacon
  • 1 cup sharp cheddar cheese, grated
  • 1 cup sour cream (or Greek yogurt)
  • 4 green onions, chopped
  • 1 medium onion, finely chopped
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Prep the potatoes: Peel and dice the potatoes into small, even cubes.
  2. Cook the bacon: In a large pot over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes.
  3. Sauté the onions: Remove the bacon and sauté the chopped onions in the bacon grease until soft and translucent, about 3-4 minutes.
  4. Add the potatoes and broth, bringing to a boil; then reduce heat and simmer uncovered for 15-20 minutes.
  5. Blend the soup for a creamy finish with an immersion blender or blend half for texture.
  6. Stir in the cheddar and sour cream over low heat until melted and combined.
  7. Season with salt and pepper, adding garlic powder or smoked paprika if desired. Serve hot with garnishes.

Notes

This soup can be made in advance and stores well. Add more broth if it becomes too thick.
