Sweet Potato Turkey Chili

A comforting and nutrient-packed sweet potato turkey chili, perfect for cozy evenings.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can diced tomatoes
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions

  1. Heat the pan with a drizzle of olive oil over medium heat.
  2. Sauté the chopped onion for about 5 minutes until translucent, then add minced garlic and cook for another minute.
  3. Brown the ground turkey, breaking it apart and cooking until browned, about 6-8 minutes.
  4. Add the diced sweet potatoes and stir, cooking for an additional 5-7 minutes.
  5. Stir in the chili powder and cumin, cooking for another minute.
  6. Pour in the chicken broth and diced tomatoes, bringing the mixture to a gentle boil.
  7. Simmer uncovered for 25-30 minutes until sweet potatoes are tender.
  8. Stir in the drained corn in the last 5 minutes of cooking.

Notes

Top with cilantro, sour cream, or a squeeze of lime for serving. Store leftovers in the fridge for up to 4 days, or freeze for longer storage.
