Tuscan Garbanzo Bean Soup

A comforting bowl of Tuscan Garbanzo Bean Soup, rich in flavor and goodness, perfect for chilly evenings.

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons tomato paste
  • 2 (15 oz) cans chickpeas (drained and rinsed)
  • 34 cups low-sodium vegetable broth
  • 1/3 cup sundried tomatoes in oil (chopped)
  • Juice of 1/2 lemon
  • 1 cup full-fat coconut milk or 1/2 cup heavy cream
  • 23 cups fresh spinach
  • Salt and black pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Let it warm up for about a minute.
  2. Sauté the diced onion for about 5 minutes until they’re soft and translucent. Then add the minced garlic and cook for another minute.
  3. Introduce the dried oregano and red pepper flakes, cooking for an additional minute.
  4. Add the tomato paste and stir it into the onion mixture for 2–3 minutes.
  5. Stir in the chickpeas, lightly mashing some to create a creamy texture.
  6. Pour in the vegetable broth gradually and bring to a gentle simmer for about 10-15 minutes.
  7. Add the chopped sundried tomatoes and squeeze in the juice of half a lemon.
  8. Finish with coconut milk, stirring well and allowing it to heat back to a gentle simmer.
  9. Add the fresh spinach, stirring until just wilted. Season with salt and black pepper to taste.
  10. Serve the soup in bowls, garnished with fresh basil leaves.

Notes

You can add more spices for heat or throw in some fresh herbs to enhance flavor. This soup tastes even better the next day!
