Creamy White Chicken Chili

A comforting bowl of White Chicken Chili, rich with tender chicken, hearty white beans, and a hint of spice, perfect for chilly evenings.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 cans (15 oz each) white beans (like Great Northern or Cannellini)
  • 1 can (4 oz) diced green chiles
  • 1 onion, chopped
  • 2 teaspoons ground cumin
  • 4 cups chicken broth (or vegetable broth)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream, for topping
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add the chicken to the pot along with a pinch of salt and pepper. Brown the chicken on all sides for about 4-5 minutes.
  3. Sprinkle in 2 teaspoons of cumin and stir for about 30 seconds.
  4. Pour in 4 cups of chicken broth, then add the drained white beans and diced green chiles. Stir gently to combine and bring to a gentle boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes.
  6. Remove the chicken and shred it into bite-sized pieces. Return to the pot and stir to combine.
  7. Taste your chili and adjust with salt, pepper, and lime juice as needed.

Notes

Feel free to add diced bell peppers, jalapeños, cream cheese, or smoked paprika for variations.
