Orzo Soup

A cozy and heartwarming orzo soup filled with fresh vegetables and flavors, perfect for chilly days.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium-sized onion, diced
  • 1 large carrot, diced
  • 1 large celery rib, diced
  • 1 garlic clove, minced
  • ½ teaspoon dried basil or dried thyme
  • 2 teaspoon flour
  • 4 cups (960 ml) low-sodium vegetable broth
  • 1 ¼ teaspoon salt, or to taste
  • 1 cup (165 grams) orzo pasta
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Sauté the vegetables: In a heavy-bottom pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, stirring occasionally until the vegetables are tender and slightly caramelized.
  2. Add the garlic & herbs: Once your vegetables are golden, add the minced garlic and your choice of dried herbs. Sauté for an additional minute.
  3. Incorporate the flour: Sprinkle the flour over the sautéed vegetables, stirring continuously for about a minute.
  4. Add the broth: Gradually pour in the vegetable broth while continuing to stir. Increase the heat and bring it to a gentle simmer.
  5. Stir in the orzo: Once simmering, toss in the orzo pasta and salt. Let it cook for about 8-10 minutes, or until the orzo is al dente.
  6. Season to taste: After cooking, taste your soup and adjust the seasoning with more salt if needed.
  7. Finish with fresh parsley: Stir in the fresh chopped parsley just before serving.

Notes

You can add shredded rotisserie chicken, crushed red pepper, or even a splash of heavy cream for variations.
