  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • 2 eggs
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking pan by greasing a 9×5 inch loaf pan with butter or cooking spray.
  3. Mix dry ingredients: In a medium bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  4. Cream the butter: In a large mixing bowl, cream the softened butter until light and fluffy.
  5. Add the eggs and vanilla, beating in the eggs one at a time, mixing well after each.
  6. Incorporate the crushed pineapple by folding it gently into the mixture.
  7. Combine the wet and dry ingredients, stirring gently until just combined.
  8. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  9. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Wrap any leftover bread in plastic wrap and keep at room temperature for 2-3 days. Freeze slices for later.
