  • 1 small onion, diced

  • 1 bell pepper (red or green), chopped
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Prep your ingredients: Start by cutting your chicken into bite-sized pieces and dicing your onion and bell pepper.
  2. Cook the rice: Use previously cooked rice or cook your fresh rice now.
  3. Heat the oil: In a large skillet or wok, heat the olive oil over medium-high heat.
  4. Cook the chicken: Add the chicken pieces and season with salt and pepper, browning for about 5-6 minutes.
  5. Sauté the vegetables: Add the diced onion and bell pepper, cooking for about 3-4 minutes until softened.
  6. Add garlic and ginger: Toss in your minced garlic and ginger, cooking for another minute.
  7. Incorporate pineapple and chicken broth: Fold in the pineapple, chicken broth, soy sauce, and brown sugar.
  8. Simmer and combine: Allow it to simmer for about 5-7 minutes.
  9. Bring it together: Add the cooked rice and gently fold everything to combine.
  10. Serve and garnish: Remove from heat and sprinkle with chopped green onions before serving.

Feel free to switch up ingredients for variety, such as adding tropical fruits or a spicy kick with red pepper flakes.
