Pineapple Chicken Kabobs

Delightful kabobs featuring succulent chicken, juicy pineapple, and colorful bell peppers, all drizzled with a tangy-sweet marinade.

Ingredients

Scale
  • 2 chicken breasts, cut into chunks
  • 1 cup fresh pineapple, cut into pieces
  • 1 bell pepper, cut into squares
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Marinate the Chicken: In a medium bowl, whisk together the soy sauce, olive oil, honey, garlic powder, and grated ginger. Add the chicken chunks and let it marinate in the refrigerator for at least 30 minutes.
  2. Prepare Your Skewers: While the chicken marinates, chop the bell peppers and pineapple into even pieces.
  3. Skewer the Ingredients: Thread the chicken, pineapple, and bell pepper onto the skewers, alternating them for a beautiful presentation.
  4. Preheat the Grill: Heat your grill to medium-high.
  5. Grill the Kabobs: Place the skewers onto the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked.
  6. Rest and Serve: Remove the kabobs from the grill and let them rest for a few minutes before serving.

Notes

Consider drizzling with honey or lime juice before serving and garnishing with fresh herbs.
