Pineapple Chicken Kabobs

Juicy chicken marinated in a savory sauce, perfectly grilled with sweet pineapple and crunchy bell peppers.

  • 2 chicken breasts, cut into chunks
  • 1 cup fresh pineapple, cut into chunks
  • 1 bell pepper, cut into chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a large bowl, combine the soy sauce, honey, olive oil, garlic powder, ginger, salt, and pepper. Whisk until mixed. Add the chicken chunks, ensuring they are coated. Cover and marinate in the fridge for at least 30 minutes.
  2. Prepare the skewers: Soak wooden skewers in water for 30 minutes if using. Chop the bell pepper and pineapple into similar-sized chunks.
  3. Assemble the kabobs: Thread chicken, pineapple, and bell pepper onto the skewers, alternating for visual appeal.
  4. Preheat the grill: Heat to medium-high (around 400°F) or use a stovetop grilling pan.
  5. Grill the kabobs: Place on the grill, space them out, and cook for about 10-12 minutes, turning occasionally, until chicken is cooked through.
  6. Enjoy: Remove from the grill and let rest for a minute before serving.
