Cozy Reuben Soup

A creamy and hearty soup inspired by the classic Reuben sandwich, featuring corned beef, tangy sauerkraut, and Swiss cheese.

  • 1 pound Corned Beef, chopped
  • 2 cups Sauerkraut, drained
  • 1 cup Swiss Cheese, shredded
  • 1 cup Heavy Cream
  • 4 cups Beef Broth
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dill Seeds
  • 1 teaspoon Caraway Seeds
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients by chopping corned beef into bite-sized pieces.
  2. Sauté the chopped corned beef in a large pot over medium heat for 3-5 minutes.
  3. Add 4 cups of beef broth and bring it to a gentle simmer.
  4. Stir in the sauerkraut and let it bubble for about 10 minutes.
  5. Pour in 1 cup of heavy cream and keep the heat low to avoid boiling.
  6. Add 1 cup of shredded Swiss cheese and stir until melted.
  7. Season with garlic and onion powder, dill, and caraway seeds. Adjust seasoning with salt and pepper.
  8. Serve the soup in bowls and enjoy!

Notes

For a vegetarian option, substitute corned beef with sautéed mushrooms. You can also add a dash of hot sauce for an extra kick.
