Caramel Apple Cheesecake Bars

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups peeled and diced apples (such as Granny Smith)
  • 1 cup caramel sauce
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium mixing bowl, combine the graham cracker crumbs, sugar, and melted butter.
  3. Mix until the crumbs are fully coated and resemble wet sand.
  4. Press this mixture into the bottom of a greased 9×9-inch baking pan.
  5. Place the pan in the preheated oven for 8-10 minutes, or until fragrant and just golden.
  6. In a large mixing bowl, beat the softened cream cheese with the sugar until smooth and creamy.
  7. Add the vanilla extract and eggs, one at a time, mixing well after each.
  8. Gently fold in the diced apples with cinnamon and nutmeg.
  9. Pour the cheesecake mixture over your pre-baked crust.
  10. Drizzle the caramel sauce on top, then swirl it into the batter.
  11. Bake for 35-40 minutes, until the edges are set with a slight jiggle in the center.
  12. Once baked, turn off the oven and crack the door, letting the cheesecake cool inside for an hour.
  13. Refrigerate for at least 4 hours or overnight to set.
  14. Slice into squares and serve with more caramel sauce.

Notes

For a nutty crunch, stir in chopped walnuts or pecans; for a vegan version, use vegan cream cheese and flax eggs.
