Creamy Boursin Chicken Orzo

A creamy and elegant dish perfect for weeknight dinners or dinner parties, made with chicken, orzo, and Boursin cheese.

  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup fresh spinach
  • 8 oz Boursin cheese
  • 2 cups low-sodium chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add your orzo and cook according to package instructions until al dente, usually about 8–10 minutes.
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Once the skillet is hot, carefully add the chicken and sear for about 5-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and let it rest on a plate. In the same skillet, add another splash of olive oil if needed, then toss in the fresh spinach and sauté for 2-3 minutes until it wilts down.
  4. Lower the heat and pour in the chicken broth, scraping the skillet to mix in all that flavorful goodness. Stir in the Boursin cheese until it melts into a creamy sauce, about 2-3 minutes.
  5. Add your cooked orzo to the skillet with the creamy sauce, tossing everything together. Slice the chicken and lay it on top, garnishing with extra cheese or fresh herbs if desired.
  6. Taste and adjust the seasoning with salt and pepper as needed. Serve and enjoy!

Notes

Feel free to add cherry tomatoes, asparagus or incorporate pesto for variations. This dish can be made ahead of time and reheated, and leftovers can be frozen (though the texture may change).
