Marry Me Chicken Soup

A cozy comfort meal infused with roasted garlic, sun-dried tomatoes, and creamy goodness, perfect for chilly nights.

Ingredients

  • 1 lb Chicken Breast, cut into bite-sized pieces
  • 1/2 cup Sun-Dried Tomatoes, chopped
  • 2 cups Spinach, fresh or frozen
  • 3 cloves Garlic, minced
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup Cream
  • 4 cups Chicken Broth
  • 1 tbsp Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prep the chicken by cutting it into bite-sized pieces and seasoning generously with salt and pepper.
  2. Sauté the minced garlic in olive oil over medium heat for about 30 seconds until fragrant.
  3. Cook the seasoned chicken in the pot for about 5-7 minutes until golden brown and cooked through.
  4. Add the sun-dried tomatoes to the pot and stir to combine.
  5. Pour in the chicken broth and bring to a simmer, letting it cook for about 10 minutes.
  6. Incorporate the cream and Parmesan cheese, stirring to combine.
  7. Add the spinach and allow it to wilt for a minute.
  8. Serve hot, garnished with extra Parmesan or fresh herbs.

Notes

For a lighter option, substitute cream with half-and-half or coconut milk. Soup can be frozen for future meals.
