Homemade Roasted Butternut Squash with Ground Beef

A hearty dish featuring roasted butternut squash and savory ground beef, perfect for cozy gatherings.

  • 1 small butternut squash, peeled, seeded, and diced
  • 6 yellow potatoes, diced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 3 sprigs fresh rosemary
  • 1 lb Laura’s Lean ground beef
  • 3 large carrots, diced
  • 4 garlic cloves, minced
  • 1/2 white onion, diced
  • 12 tbsp olive oil, for sautéing
  • 12 sprigs fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the diced butternut squash and yellow potatoes with 2 tablespoons of olive oil, salt, and black pepper. Spread in a single layer on a baking sheet.
  3. Roast the baking sheet in the preheated oven for about 25-30 minutes, stirring halfway through.
  4. Sauté the onion and minced garlic in 1-2 tablespoons of olive oil over medium heat until soft and translucent, about 5-7 minutes.
  5. Cook the ground beef in the skillet with the onions and garlic until browned, about 8-10 minutes, seasoning with salt, pepper, and chopped rosemary.
  6. Add the diced carrots and continue cooking for 5 more minutes.
  7. Combine the roasted vegetables and beef mixture in a baking dish.
  8. Bake for an additional 10-15 minutes.
  9. Taste and adjust seasoning if necessary.

Notes

Garnish with fresh rosemary or drizzle additional olive oil before serving. Pairs well with a light salad or crusty bread.
