Zuppa Toscana

A cozy Italian classic that combines Italian sausage, potatoes, kale, and cream for a heartwarming and flavorful soup.

  • 1 pound Italian sausage
  • 4 Yukon Gold potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon red pepper flakes

Instructions

  1. Sauté the sausage in a large pot over medium heat until browned, about 5-7 minutes.
  2. Add in the diced onion and minced garlic, cooking for another 2-3 minutes until the onion is translucent.
  3. Mix in the diced potatoes and let soak up the flavors for about 2 minutes.
  4. Pour in the chicken broth, scraping the bottom of the pot to lift any stuck bits, and bring to a boil.
  5. Simmer for about 15-20 minutes until the potatoes are fork-tender.
  6. Add the kale and cook for an additional 5 minutes until tender.
  7. Time for cream: stir in the heavy cream gently.
  8. Finish with salt to taste and red pepper flakes, adjusting seasonings as needed.
  9. Let it rest for 5 minutes before serving.

Notes

Serve with crusty bread or a light salad for a complete meal. You can make the soup ahead of time but add cream only when reheating.
